Learn to brew Mao Jian green tea for a bright, floral cup. Get the right water temperature, steeping time, and leaf-to-water ratio.

Quick answer

Brew Mao Jian green tea with water around 175°F (80°C), steep for 2–3 minutes, and use about 1 teaspoon of leaves per 8 oz cup for a fresh, floral cup without bitterness.

Why water temperature matters for Mao Jian

Mao Jian is a delicate green tea with fine, furry leaves. Boiling water can scorch the leaves, releasing bitter compounds and muting the floral aroma. Using cooler water preserves the fresh, vegetal notes and subtle umami finish that make this tea special.

Choosing the right vessel

A glass or porcelain teapot or gaiwan is ideal because it doesn't absorb flavors and lets you watch the leaves unfurl. Avoid metal or plastic infusers that can impart off-tastes or restrict leaf expansion.

Step-by-step brewing guide

  1. Heat water to 175°F (80°C): Bring fresh, filtered water to a boil, then let it cool for about 1–2 minutes. If using a temperature-controlled kettle, set it to 175°F. Boiling water will ruin the tea's delicate flavor. If you don't have a thermometer, let boiling water rest for 2 minutes before pouring.
  2. Measure the leaves: Use 1 teaspoon (about 2 grams) of Mao Jian leaves per 8 oz cup. For a stronger brew, add more leaves rather than steeping longer, which can cause bitterness. A kitchen scale gives the most consistent results, but a teaspoon works fine.
  3. Steep for 2–3 minutes: Pour the hot water over the leaves and start timing. At 2 minutes, taste the tea. If you prefer a stronger flavor, steep up to 3 minutes total. Over-steeping makes the tea astringent. Set a timer — it's easy to lose track and end up with a bitter cup.
  4. Strain and enjoy: Pour the tea through a fine-mesh strainer into your cup to catch the small leaf particles. Mao Jian can be re-steeped 2–3 times; add 30 seconds to each subsequent steep. Save the leaves for a second steep — the flavor evolves beautifully.
